Julian Jeffs wrote ‘Sherry’ in 1961 and has been a pre-eminent writer on Sherry ever since, having tasted thousands of sherries since his first trip in the late 1950s. He shares his favourite sherry food pairing with us in this quick video interview.

What is your favourite pairing for Sherry? In which kind of food situation do you like to enjoy it, and which Sherry with which food perhaps?
Well, I love Fino with shellfish. And with all sorts of tapas – calamaris is another one. It goes very well with all manner of foods but I don’t normally drink sherry with a meat course, I don’t think it goes very well. It goes excellently with shellfish. And the other extreme of the meal. There’s no finer combination than of good, old dessert sherry with stilton cheese. It goes wonderfully with cheese!
And what qualifies as old? Because you’ve got a very good cellar!
Well, I like very old wines that are 20 years plus VOS or VORS and one of those with cheese is absolutely marvellous I think!
