We take an inside look at the work and research happening at UC Davis‘ sustainable winery with the University winemaker Chik Brenneman. Amanda Barnes interviews him about the latest trends in winemaking including wine varieties (most notably Pinot Noir and Cabernet Sauvignon), wine clones and recent clonal studies, and sustainability in wineries and wine production.
Interviewed in the middle of the harvest in California, we also find out what are the biggest rookie mistakes in the winery and Chik’s tips for students starting their career in winemaking. UC Davis is renowned for having one of the best viticulture and enology courses in the US and is where many of the top winemakers in the country studied.
